Grilled Portabello with Dijon & Thyme Scrambled Eggs..






Grilled Portabello with Dijon & Thyme Scrambled Eggs..

2 Free Range eggs

1 Teas Dijon Mustard
1 Tablespoon of Low Fat Cottage Cheese
1 Sprig of Thyme
1 Portabello Mushroom 
Slices of Zucchini 

Brush the mushroom and zucchini with Olive Oil and place into a large ramekin or ceramic dish. Grill on each side for approx. 8 - 10 minutes or until tender. 

Whisk together in a microwave proof bowl, I use a coffee cup. Cook for 2 mins in the microwave stirring every 30 seconds. Top the Mushroom with the eggs and sprinkle with some more fresh thyme. 

Creamy delicious low fat breakfast... YUM!

Lj's Corn Beef Breakfast Fritters



Lots of goodness in these lovely Corn Beef Breakfast Fritters! Great way to start the day!

Ingredients:

2 Free Range Eggs
1/2 Cup diced Corn Beef
1/2 Small Grated Zucchini
1 Large Portabello Mushroom
1 Heaped Tablespoon of finely diced Red Capsicum
1 Heaped Tablespoon of finely diced Red Onion
1 Tablespoon of SF Flour
1 Heaped Tablespoon of Low Fat Cottage Cheese

What to do:

In a non stick pan saute the mushroom and zucchini and let it cool. Mix together all of the other ingredients until well combine and then add the veggies. Spray your non stick pan with cooking spray and cook just like you would pancakes!

Lj's Healthy Frittata ~ Great for Breakfast, Lunch or Dinner



Man of the house decided he would love this for lunch.. Not long got him to even 
try eggs and now all he wants are my Frittata's! This is a great Breakfast or Lunch Recipe!

This one has the following Ingredients to serve 2 :

4 Free Range Eggs
 Fresh Parsley & Chives chopped
(SO lucky my herb garden is plentiful!)
1/2 Cup of Skim Milk
100g Diced Lean Ham off the Bone
Veggies: 
(However much you like really and whatever you like
 I add enough to almost cover the bottom of the pan)
Capsicum (approx 1/4 small)
Shallots (1 Large)
Portabello Mushroom (1 Large)
Grated Zucchini (1/2 a small one)
60g of Finely grated Live Free Kraft Tasty Cheese

What to do:

Heat a non stick pan (that is suitable to go under the grill) and spray with cooking spray. Add the veggies and cook until tender. Add the diced Ham. Give it a good mix to combine. Using a Stick Mixer whisk the Eggs and the milk, then add the chopped herbs, Sea Salt and Cracked Pepper. I find that if you give it a really good whisk the end result is so light and fluffy! Pour the egg mix over the ham and veggies and let it cook until about half way through. Top with the Cheese.  Heat up the grill and put your pan under it until your Frittata is golden brown and cooked through the center. If you don't have a pan that you can put under the grill you can carefully turn it over in the pan to brown the other side.

I'm getting a little boring arn't I and ever so predictable when it comes to Breakfast! But a girl wants what a girl wants and after my morning work out I need to refuel!  I've toasted a turkish, topped with a small amount of Avo, Live Free Kraft low fat cheese, a slice of ham off the bone grilled and a free range egg.. YUMMO!!!!  Almost at the end of my Skinny Body Care 90 Day Challenge 8 kg and 46 cm gone, so proud of myself for sticking to it and for starting to enjoy exercise again. Mushroom, Ham & Herb Breakfast Wrap



Ingredients:

60g Lean Diced Ham
60g Button Swiss Brown Mushrooms
1 Large Free Range Egg
1 Heaped Tablespoon of 97% Fat Free Cottage Cheese
Fresh Thyme and Parsley chopped
1 Rye Mountain Bread Wrap

What to do:

Heat a non stick frypan and spray with cooking Spray and add the Ham & Mushrooms. Cook for a few minutes until golden. 


Mix together the Egg, the Cottage Cheese & Herbs and pour over the top. Mix quickly to scramble the eggs.




Pile into a Rye Mountain Bread Wrap and roll it into a log. Pop into the sandwich toaster for a few minutes.

Delicious, Fast Breakfast for those like me always on the run!

Lj's Swiss Brown Mushroom Breakfast



Always make time for a healthy breakfast to keep you energised until lunch time. 


This morning I've cracked a free range egg into a lovely Swiss brown and topped with homegrown shallots and a small sprinkle of Parmesan. Popped that onto some GF grain toast with no butter..Splash of homemade worstershire sauce and bam there's breakfast

Lj's Cottage Cheese Omelette




Healthy and delicious! You can add whatever cooked Vegetables you like... add some Bacon or Chicken or whatever you have left over.


2 Free Range Eggs
3 Tbs Low Fat Cottage Cheese
Splash of Skim Milk
Cracked Pepper and Salt
Whisk together and set aside..


In a hot fry pan add some chopped Red Tuscan Onion, Grated Zucchini and Sliced Button Mushrooms.
Saute until soft. Whisk together the Cottage Cheese and Eggs and pour over the top.  When it looks 3/4 cooked through pop it under a hot grill for a few minutes until cooked through. Flip over one side and serve with freshly chopped chives. I love to splash on a bit of homemade Worstershire Sauce :-)

Lj's Ham & Mushroom Scrambled Eggs




Yum! This is going to give me a great start to the day and energy to burn until Lunch time!
Quick & Easy... and remember Breakfast is the most important meal of the day!

Beat with a fork, 2 Free Range Eggs with 2 Tablespoons of Low fat Cottage Cheese
 into a mug and Season with Himilayan Rock Salt and Cracked Pepper.

Heat a Non Stick Frypan and add 3 sliced Button Mushrooms and 3 Slices of 
diced Low Fat Ham (Approx 35g). Saute until the mushrooms are soft.
 Add the Egg mix and some fresh chopped Parsley. Cook and stir until the egg is cook. 

Dig in and get about your busy day :-)

Lj's Herb & Parmesan Hash browns

Had some friends for Breakfast this morning and I just felt like
 Hash browns and not that crap you get at McDonalds... 
Here is how I like to make Hash browns..


Ingredients:

4 Medium Potatoes grated
1 Medium White onion finely diced
2 Free Range Eggs
Freshly Chopped Parsley and Chives
1/4 Cup SR Flour
1/2 Cup Freshly grated Parmesan
Himilayan Salt
Cracked Black Pepper

What to do:

Throw everything into a bowl, mix well to combine and shallow fry in Olive Oil..

That easy and so delicious!

Roast Vege Omelette.. One of my fave healthy breakfasts!


I am a big fan of a hearty breakfast and I love omelette's! This morning I've used left over roast veg from a wicked roast pork and vege webber the man of the house cooked last night, added some avocado and low fat tasty cheese. Lots of cracked pepper and a splash of home made tomato sauce.. YUM! Oh and use fresh free range eggs!

I really do love my breakfasts..

Baked Duck Egg Breakfast..

Making the very most of these delicious fresh duck eggs! I've cut up a left over cooked homemade sausage, a slice of diced cooked bacon with some onion, cracked 2 duck eggs of top and some freshly grated Parmesan. Pop into a 180 oven until set. I've served with some of my homemade chilli sauce and toasted Japanese bread from Bread Top. Keep me going way past lunch time, just what the Dr ordered for a girl on the run all day :-)

Mmmmm, Breakfast! What a great way to start off your day!


A yummy breakfast for my growing girl who has swimming trials at school today
and dancing after school. She loves this twist on bakebeans on toast.I've added some tuscan onion, mushrooms, bacon,
dollop of my homemade tomato chutney and a sprinkle of cheese.

Roast Vege Omelette.. Best Breaky for those of us that are busy and on the run in the mornings!

A great way to start your busy day is an Omelette! I'm not into Microwave cooking at all but this is so quick and some mornings I am literally running out the door knowing I most likely stop for lunch! I've throw some left over roast veges in a dish, cracked in two eggs and seasoned with sea salt and cracked pepper. Sprinkle some grated cheese on top and throw into the microwave for 3 mins.. breakfast is served. Really healthy and will definately keep you going until lunch time! Time to run....

Bacon & Egg burger with fresh homemade Chilli Sauce... Delicious Sunday Brunch

Now this is a Sunday Brunch... Fresh bacon from the butchers, bread from the best baker in town, free range eggs from one of my clients and homemade chilli sauce.. mmm what a beautiful way to start a Sunday <3

My Homemade Spaghetti on English Muffins..


Homemade Spaghetti on English Muffins..

Boil some water and salt well. Add some spaghetti and cook until tender. In a fry pan saute some diced bacon, mushrooms and onion. Add a tin of diced roma tomatoes and some dried italian herbs. Simmer for around 10 mins until the tomatoes are soft and the flavours are fragrant. Add a little tomato sauce and some tomato paste to taste and then stir in the cooked spaghetti. Simmer for a few more minutes and then serve on toasted english muffins and top with grated tasty cheese.
