Curried Roo Bangers!



Curried Kangaroo Sausages... Healthy and delicious! I don't generally eat sausages unless I make my own but these are fab! Gluten free, 98 % Fat Free, high in Iron and Protein! 

8 Kangaroo Sausages
1 Onion Sliced
1 Garlic Clove Crushed
1 Teaspoon of Keen's Curry Powder
1/2 Teaspoon of Keens Mustard Powder
1 Tablespoon of Brown Sugar
2 Tablespoons of Apple Cider Vinegar
1 Tin of Herb & Garlic Crushed Tomatoes

Mix everything together and pour over the sausages. I'm cooking mine in the oven at 150 degrees for approx. 4 - 5 hours, maybe a bit more. You can also cook in your slow cooker on low for 6 - 8 hours.

Lj's Skinny Lasagna


Delicious Lasagna using Slim Me Lasagna....

Start by making your Bolognaise.. I use Kangaroo due to the fact it has a lovely flavour, is practically fat free with lots of Iron and Protein. 

Here is my Recipe:




I had plenty of time yesterday so the only changes I made to this recipe is that I made the sauce myself, where as in this recipe I added a few jars of Passata. If you already make an awesome bolognaise then just stick with that.. As Claire Robinson says BYOC.. (Be your own Chef)
Oh I also added some lean shortcut bacon :-)

Make these Slim Noodles to packet instructions...


In a baking dish, layer your bologaise sauce and these lasagna sheets, top with a small amount of low fat freshly grated cheese and bake for 35 mins at 180 degrees C. Best to let it sit and cool as this makes it easier to slice and serve.

Italian Kangaroo Burger


Must be starting to  feel better because I'm kind of hungry (and so I should be as I've eaten very little the last few days) for a delicious burger with some melted cheese and chutney on multigrain bread! This one is for all you Kangaroo lovers... Not that there are many LOL

Mix together some kangaroo mince, tomato chutney, dried Italian herbs, Parmesan cheese, an egg and some homemade breadcrumbs. Heat a pan and spray with cooking spray. Cook until golden on each side and cooked through. Pop it into some bread with low fat tasty cheese and tomato chutney and them into the sandwich toaster.

Demolish! :-)

Who Put The Roo In The Stew!

I was going to cook chicken tonight but with a change in the weather I decided on a thick and flavoursome Kangaroo Casserole.. I have researched many Kangaroo Stew recipes but decided to come up with my own. Not to everyones taste but we love Kangaroo in this house. Low in fat, high in iron and protein. A very healthy and hearty meal!


Ingredients:

750g Garlic and Herb marinated kangaroo steak
4 Rashers of Bacon diced
1 Large Onion Diced
1 Large Garlic bulb crushed
8 Button Mushrooms sliced
1 Tin of diced Tomatoes
3/4 Cup Red Wine (I used Cab Sauv)
Cracked Sea Salt and Pepper to season
2 tbs plain flour/1tbs powdered Chicken Stock in 1/2 cup water

What to do:

Brown the Kangaroo, bacon, garlic and onion in a splash of olive oil. Add the tinned tomatoes and red wine. Season with salt and pepper. Stir and bring to a simmer. Simmer for an hr or so and then add the carrots and mushrooms. Simmer for a few hrs on really low heat until the kangaroo is tender. Add the flour/stock mix and let the casserole simmer and thicken. You can also do this in the slow cooker if you wish. Serve on a bed of creamy potato and sweet potato mash.

I'm also making a cheese and bacon bread to serve with this evening.
