My Herbed Chicken Rissoles Wrapped in Bacon


500g Chicken mince (I use thighs..chop and put through the food processor to mince)
1 Beaten Egg
1 Garlic clove crushed
3/4 cup breadcrumbs
2 Tbs of each, finely chopped basil and chives
1/3 cup BBQ Sauce
8 Rashers of bacon trimmed of the rind (remove the eye pieces and you can freeze to use later on)

What to do..

Combine the mince with the breadcrumbs, egg, garlic, herbs and BBQ Sauce. Shape into 8 rissoles. Wrap one piece of the bacon around each rissole and secure with a toothpick. Brown off the rissoles in a frypan and transfer to a baking tray lined with baking paper. Brush with the BBQ sauce and bake at 180 for around 15 minutes. Baste with the remaining BBQ sauce half way through cooking. Serve with your fave salad or veges.
