Lj's Italian style Chicken & Bacon Rice


Lj's Italian style Chicken & Bacon Rice

1 Lge Chicken Breast diced
3 Rashers of Bacon diced
I onion diced
I cup white rice
1 cup chicken stock
1 cup vege stock
6 Button Mushrooms sliced
1 Large Zucchini diced
1 large carrot diced
1 Tin diced tomatos
1 Bottle of pasta sauce or tomato puree
Fresh basil and oregano

In a large frypan with a lid or I use my big oval enamel lined crockpot . Fry off the bacon, chicken, onion and mushrooms until the onions are soft. When the chicken and bacon is browned add the rice and stir through. Add the stock, tin tomatoes, pasta sauce and carrots. Give it a good stir until all combined. Put the lid on and let it simmer for about 10 minutes. Add the zucchini and stir through. Put the lid back on and let it simmer until the rice is cooked. Stir through the chopped herbs a few minutes before serving. Top with some parmesan cheese. Serve on it's own or with some fresh crusty bread.
